The color of pork can be somewhat deceiving when you are cooking it, because just when you think it is done, it may not be safe to eat. If the pork you have cooked is still a little pink, it may be okay to eat.
The muscle of the pork which is both dry and firm as well as dark usually presents as being quite pink, so it will be okay to eat as long as other parts of the pork are not the same color pink. Pork can also be deceptive in the sense that it is ready to be eaten but may not look that way.
The best thing you can do when cooking pork is to make sure it is thoroughly prepared and use your best judgment to see if it is safe to eat or not.
