Should Mayonnaise Be Refrigerated?

Mayonnaise that is commercially produced does not absolutely have to be refrigerated like many other food stuffs because of the fact that there are so many different additives like lemon juice and vinegar which prevent bacterial infection from becoming a problem. Although manufacturers may say that it is a good idea to refrigerate mayonnaise once it has been opened, the chances of getting food poisoning from bacteria forming in the mayo is highly unlikely because of all the additives that are put in.

While it is true that you do not have to refrigerate mayonnaise to avoid food poisoning, you may not want to keep it in a warm place for too long because of the fact that it will start to break down and become oily which will not make it very pleasant to eat.
