Over time garlic starts to dry up and shrivel, though it never really â€œgoes badâ€ in the same sense as most other foods. It is not susceptible to the same bacteria that other food is when it is left out for extended periods of time.

Otherwise you will run the risk of losing a lot of the flavor as well as some of the nutritional value that it has to offer.
